Katherine is returning to Methven Summer School for a sixth year to teach how to make your own soft cheese at home. Technology, commercialism and modern culinary practices are far removed from the artisan cheese maker. What Katherine will be doing is putting you in touch with something that is real and she will make the craft of making cheese possible for you. In the morning, she will demonstrate how to make mozzarellia and cheddar, followed by a ricotta using the whey. Then, working in pairs, it will be your chance to make a “mozzarellia”.You will have the opportunity to buy cheese making equipment such as cheese presses, culture and rennet, and will be ready and confident by the end of the day to go home and make your own cheeses. Those on the course last year enjoyed the chance to sample some of Katherine’s cheeses at lunch time and learn from someone who has a real passion for her subject.

Katherine has been presenting cheese making courses in New Zealand for the past 20 years. Practical and concise, her courses have inspired people from all walks of life. Katherine feels it is important to keep this ancient art of cheese making alive and well and in the grasp of people's hands today. It is Katherine's wish to educate people about cheese and milk delicacies, so that people have the confidence and skills to make their own.
